1 qt. white vinegar
1½ qt. water
1 T. Hawaiian salt
4½ c. sugar
2 T. li hing powder (optional)
¾ tsp. five spice (optional)
Handful of seedless li hing mui (optional)
20 medium to large mango (green commons)

Directions:
Directions:
Prepare mango by peeling and slicing into strips and discarding the seeds. Combine vinegar, water, Hawaiian salt, and sugar in a pot and bring to a boil. Once sugar and salt are dissolved, remove from heat and cool to lukewarm. Pour over mangoes. Cover and let stand for 24 hours, then store in the refrigerator
