2 small packages orange jello
1 large can crushed pineapple, not drained
2 cans Mandarin Oranges, drained
1 small can frozen orange juice, not diluted
1 small package instant lemon pudding
1 cup milk
1 small container cool whip

Directions:
Directions:
* Mix jello with 2 cups boiling water in a large bowl. Stir to dissolve the jello.
* Add the frozen orange juice and stir to melt the juice. Let cool.
* Add the mandarin oranges and pineapple.
* Pour the jello mixture into a 13 x 9 inch dish and place in the refrigerator to set.
* Mix the instant lemon pudding with 1 cup milk and stir until slightly thick.
* Fold in the container of cool whip (the mixture should be fluffy).
* Spread the pudding mixture over the jello mixture.
* Cover with plastic wrap and return to refrigerator until ready to serve.

This is a light salad and can served as a side dish with a meal or even a dessert. It is really refreshing on a hot day as a dessert.
