2 c grated zucchini, unpeeled
2 c sugar
1 c oil
3 eggs
1 tsp vanilla
3 c flour
1/2 tsp salt
3 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
2 c chopped nuts (optional)

Directions:
Directions:
Mix together zucchini, sugar, oil, eggs and vanilla. Sift together and add the flour, salt, cinnamon, baking soda and baking powder. Add nuts. Bake at 350 degrees for 50 to 60 minutes. Makes 2 small loaves and freezes well.
