1 cup Navy or Great Northern Beans
4 cups water

1 ham bone
1 cup diced celery
1 Bay leaf1 Cup diced onions
2 medium potatoes, diced
3/4 tsp. thyme
1/2 tsp. sea salt
1/4 tsp. black freshly ground pepper

Directions:
Directions:
Wash beans. Put beans in a large cooking pot and add the 4 cups of water. Cover and bring to a boil for 2 min. Remove from heat and let stand for about 1 hour.

Add the ham bone, celery, onions, and seasonings to the beans. Cover and simmer for approximately 1 hour. Add the diced potatoes and cook until beans are tender.

Remove the ham bone. Cut off the meat and add to the soup.
Remove about 1 cup of the beans, mash them and return them to the soup..

Yields about 4-6 servings.
