2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 cups sugar
1 cups salad oil (or substitute the oil with applesauce)
4 eggs
2 cups finely grated raw carrots
1 8 oz. Can crushed pineapple, partially drained
cup chopped nuts
1 3 oz. Can flaked coconut

Directions:
Directions:
Mix together dry ingredients. Add sugar, oil and eggs. Mix well. Add carrots, pineapple, nuts and coconut. Blend thoroughly. Pour into 3 9 cake pans or 1 13 x 9 pan. Bake at 350 for 35 40 minutes or until done.

Ice with Cream Cheese Frosting
