Ingredients:  
1 ½ c. uncooked rice, basmati
1 sm bunch baby spinach, finely chopped
½ purple onion, finely chopped
2 T. rice vinegar
2 T. olive oil
½ - 1 c. feta cheese
Grate zest + juice of 1 lemon
Salt + pepper to taste

Cook rice, once cool add the rest of the ingredients. Easy peasy!

The original recipe was orzo but I like rice better. It doesn’t have to be basmati, but that’s my preference.
