4 qt. water
½ tsp. salt
½ (16 oz.) box thin spaghetti
1 lb. bacon, cut into 1-inch pieces
½ sm. finely chopped onion
2 T. butter
¼ c. chicken broth
2 eggs
½ c. finely chopped parsley
½ c. grated Parmesan cheese

In a large saucepan, bring water and salt to a rolling boil. In the meantime, set out all ingredients so that they are handy (quick timing is important in cooking this dish). Cook spaghetti in the boiling water for 10 minutes or until tender. While it is cooking, brown bacon pieces in the skillet. Remove bacon and pour off all but 2 T. of fat from skillet (discard extra fat). Add onion and saute until soft; return bacon to skillet. Drain the cooked spaghetti and add to the onion-bacon mixture in skillet. Add butter and toss until butter is melted. Pour in chicken broth; mix well. Remove skillet from heat. Quickly stir in eggs to blend. (The heat retained in the spaghetti will be enough to cook the eggs, leaving the skillet on the burner would scramble the eggs.) Mix in parsley and sprinkle on Parmesan cheese. Toss well until cheese is evenly distributed in spaghetti. Serve immediately. Serves four.
