1 tbsp oil
400 g pork minced
7 1/2 oz can water chestnuts, drained and chopped finely
4 oz canned bamboo shoots, drained and chopped finely
6 springs onions, finely chopped
1 tbsp soy sauce
2 tsp sesame oil
2 tsp oyster sauce
tiny lettuce leaves (soak in cold water until ready to use)

Sauce:
2 tbsp plum sauce
1 tbp hoisin sauce
1 tsp soy sauce

Directions:
Directions:
Heat the oil in a pan or wok, add the pork and cook, stirring, over high heat until brown all over. Break up any lumps of mince with the back of a fork. Add the water chestnuts, bamboo shoots and spring onion, toss well and cook for 1 minute.
Combine the soy sauce, sesame oil and oyster sauce, add to the wok, toss well and cook for 2 minutes. Remove from the heat.
To make the dipping sauce, stir all the ingredients in a bowl with 2 tbsp water.
To serve, put about 1 tbsp of warm pork mixture on each lettuce leaf. Serve with the sauce
