4 halved boneless chicken breasts
flour (enough to dredge)
4 T. butter
2 T. oil
3/4 cup Dijon mustard
1 medium onion, finely chopped
1/2 cup finely chopped mushrooms
2 t. Chopped parsley
salt and pepper to taste
1 cup heavy cream
1 tsp. lemon juice

Directions:
Directions:
Dust chicken breasts lightly with flour, saute in butter and oil until nicely browned on all sides. Remove, cool slightly and then spread each piece liberally with mustard in put in shallow baking dish. Cook onion in fat remaining until golden brown, add mushrooms and cook until soft. Add parsley, salt and pepper. Blend in cream. Pour over chicken and bake at 350 for 30-35 minutes till tender. (About 25 minutes if boneless).
