4 cups sliced carrots
1/4 cup chopped onion
1/4 tsp. pepper
1/4 tsp. salt
3/4 cup mayo
2 Tbsp. horseradish
14 saltine crackers crushed (1/2 Cup)
1 Tbsp. butter, melted
2 Tbsp. snipped parsley
1/2 cup shredded cheddar cheese

Directions:
In small pan cook carrots till just tender. Drain. In small mixing bowl stir together mayo, onion, horseradish, 1/4 tsp. salt, 1/4 tsp. pepper. Add to carrots in casserole dish and stir to combine. In small mixing bowl, toss together crushed crackers, butter, and parsley. Sprinkle cracker mixture over carrots. Bake in 250 oven 20-25 minutes. Add cheese and bake until cheese is melted and heated through.
