1 stack wonton wrappers
3 cans tuna, drained & mashed
20 whole pieces sundried tomatoes in oil, chopped
Salt and pepper, sprinkle
5-6 T. mayonnaise
½ green onion, chopped or favorite garnish
24-cavity mini muffin tin
Cooking oil or cooking spray
Yields: 72 pieces (3 batches)

Combine tuna and tomatoes in container, add salt, pepper and mayonnaise. Mix well. Add more mayonnaise, if mix is dry. Marinade and refrigerate for minimum 2 hours. Spray muffin tin with cooking spray. Nestle wonton wrappers in muffin tin cavities. Roughly brush top of wrappers with cooking oil – a bit is good to go. Bake for 6 minutes at 375ºF. Pay close attention during baking, as wrappers brown quickly. Transfer to wire rack to cool. Stuff wonton cups with tuna mixture. Garnish with green onion. Serve!

Excellent for party pupus! Most importantly, you can stuff the baked wonton cups with savory or sweet food. If you don’t have a mini muffin tin, you can use a regular muffin tin, but wonton cups will be shallow. A can of tuna makes 1 batch of wonton wrappers (24 pieces). 1 stack Wonton wrappers (from Chinatown) makes 4 batches (100 pieces). Suggest Albacon tuna from Costco.
