6 cups zucchini (unpeeled) sliced
¼ cup diced onion
1 can condensed cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1 - 8 oz. package (Pepperidge Farm) stuffing mix (crumbs)
1/2 cup butter

Directions:
Directions:
Mix together soup, sour cream, and carrot. Combine with zucchini and onion. Mix butter with stuffing in a separate bowl.

Layer in casserole dish:

1/2 crumb mixture
All zucchini mixure
Remaining crumbs on top

Bake at 350 for 30 minutes.
