6 chicken breasts, cut into bite size pieces
2-3 celery stalks, chopped
1 onion, chopped
½ package fresh chopped mushrooms
1 stick butter
1 c. flour
64 oz. Chicken stock
2 cans Canoe (pre-cooked) Wild Rice, drained
1 c. half and half
Salt and Pepper or seasoning to taste

Directions:
In a skillet with oil, cook chicken through until no longer pink. In a kettle, melt butter and add chopped celery, onion and mushroom and cook until all vegetables are tender. Add in 1 cup flour and then slowly stir in chicken broth to make sure there are on lumps. Add in cooked chicken (with juice from skillet) and 2 cans of drained wild rice. Season to taste. Let simmer until hot and bubbly. Just before serving add 1 cup half and half and heat through – do not boil. Serve and enjoy!
