¼ c butter
¼ c flour
½ tsp salt
¼ tsp pepper
2 c milk

In medium saucepan, melt the butter. Blend in the flour, salt and pepper. Cook until mixture is smooth and bubbly. Gradually whisk in milk. Heat until mixture boils and thickens, stirring constantly.

Notes: The 3 secrets for a perfect white sauce:
1. Combine the flour and butter thoroughly to a smooth paste without lumps prior to adding any liquid.
2. Gradually add the liquid, about ¼ c at a time, thoroughly blending to a smooth consistency after each addition. A wire whisk works great.
3. Stir constantly while heating to avoid burning.

For a thin white sauce, decrease butter and flour to 2 T of each. For a thick white sauce, increase butter and flour to ½ c of each. In either case keep the liquid amount the same.
