20 Cups Tomatoes, skinned and roughly chopped
3½ Cups Onions, chopped
2 Green Peppers, chopped
4 Stalks of Celery, chopped

Cook 1st 4 ingredients for about 2 hours. Let cool a little, then blend in your blender.

Add:
6 6oz. Tomato Paste
1 T Pepper
2 T Oregano
3 T Canning Salt
¾ Cup Sugar
1 tsp. Basil
5 Bay Leaves

Simmer until thick. If you squeeze out some of the liquid from your tomatoes, it doesn't take more than an hour. I like to use Roma Tomatoes. Remove bay leaves and can or freeze. Makes about 11 pints.
