For Cake:
1 package sweet cooking chocolate
1/2 cup boiling water
1 cup butter
2 cups sugar
4 egg yolks, unbeaten
1 teaspoon vanilla
2 1/2 cups sifted cake flour or 2 cups plain flour
4 egg white, stiffly beaten
1 teaspoon baking soda
1 cup buttermilk

For Icing:
1 cup evaporated milk
1 cup sugar
3 egg yolks
1 stick butter
1 teaspoon vanilla
1 can flaked coconut
1 cup chopped pecans

For Cake:
Beat egg whites and set aside. Melt chocolate in 1/2 cup of boiling water. Cool. Cream the butter and sugar until light and fluffy. Add egg yolks, one at a time, beating after each. Add vanilla and melted chocolate and mix until blended. Sift flour with soda and salt. Add sifted dry ingredients alternately with buttermilk, beating after each addition until batter is smooth. Fold in stiffly beaten egg whites.
Pour batter into 3- 8" or 9" layer pans, lined on bottom with parchment paper. Bake in 350º oven for 35-40 minutes. Cool. Frost top and between layers with Coconut-Pecan Frosting.

For Frosting:
Combing evaporated milk, sugar, egg yolks, butter and vanilla in saucepan. Cook over medium heat about 12 minutes, stirring constantly, until mixture thickens. Add coconut and pecans. Beat until cool and of spreading consistency. Makes enough to cover tops of three 9" layers.
