2-3 strips bacon, diced, or 2 tablespoons bacon fat
1 medium onion, diced
1, 32 ounce jar sauerkraut (Polish or with caraway seeds, Not Bavarian), drained (reserve juice)
1 teaspoon caraway seeds
1/4 teaspoon black pepper

Directions:
Directions:
Place diced bacon in a large skillet or Dutch oven and brown until crispy and fat is rendered. Add caraway seeds and cook until onion is lightly browned/caramelized. Drain sauerkraut and reserve juice. Add sauerkraut to pan and stir well, picking up bits of fond (browned residue) at bottom of pan with wooden spoon. Add 1/4 cup of juice back into pan. Cook, covered, on low heat. Check every 20 minutes and stir. Add juice only as necessary if dry, 1/4 cup at a time. Cook for at least one hour.
