1 lb ground beef
1 med eggplant, peeled and cubed
1 med onion, peeled and chopped
2 Zucchini, sliced 1/2 inch thick
2 yellow squash, sliced 1/2 inch thick
1 c white corn
30 oz diced tomatoes
1 clove garlic, minced
1 T Italian Seasoning
1 tsp salt
½ tsp black pepper
1 c water

Directions:
Directions:
In a large frying pan, brown the ground beef and onion over medium heat.

Dream the meat of grease, return to the frying pan. Add the garlic. Cook over medium heat for 2-3 minutes. Add all of the vegetables and seasonings. Add 1 c of water. Stir. Cover and bring back to a boil. Reduce heat to low and simmer for approximately 30 minutes or until veggies are tender.

Notes: Any vegetables you like can be used in this. These are the ones MomMom usually used.

Chicken can be used instead of ground beef. Cut the chicken into bite size pieces, and brown in about 2 T of EVOO.

Serving idea: This is great served over spaghetti with Parmesan cheese.
