1 lb filet steak
1 T paprika
3 T EVOO
4 oz mushrooms, sliced
1 c sherry, white
˝ c beef broth
1 c sour cream
1 tsp lemon juice
Salt, to taste
Fine noodles, cooked

Directions:
Directions:
Cut beef into ˝ inch thick strips; add paprika.

Heat EVOO, then sauté beef very fast on high heat (2 to 4 minutes). Remove meat from pan.

Add the mushrooms and sauté for a few minutes; remove. Add sherry to the pan; reduce to ˝ its volume by boiling. Add the beef broth and let boil briskly (uncovered) 5 minutes. Add the sour cream, lemon juice, and salt to taste.

Return the meat and mushrooms and bring just to boil ( do not let boil when meat is in the sauce). Spoon over fine noodles (well-drained and hot).
