1 box Penne pasta
16 ounces mozzarella cheese, cubed
6 Roma tomatoes, diced
¼ cup sliced fresh basil leaves
2 garlic cloves, minced
¼ cup olive oil
¼ cup balsamic vinegar
Salt and pepper to taste

Directions:
Directions:
Cook the pasta. In a separate bowl, combine the diced tomatoes, cubed cheese, minced garlic and cut fresh basil. To cut basil, I take kitchen shears and just snip pieces horzontally across the leaf, starting at the base and cutting up to the top. Mix these ingredients. Add the cooked pasta, olive oil, and vinegar. Mix all ingredients together well. Add salt and pepper to taste.
