1 lb Italian sausage (removed from casing)
½ onion
2-3 cloves of garlic
3 zucchini, chopped or sliced
2 cans Italian stewed tomatoes
2 cans diced tomatoes
2 cans great northern or cannellini beans, drained
1 T Italian seasoning
2 bay leaves
½ tsp red pepper flakes
1½-2 boxes of beef broth
⅛ c. red wine

1 package cheese tortellini or other small pasta
Top with fresh parmesan

Directions:
Directions:
Put olive oil in pan and brown sausage (drain). Add in garlic and onion and saute until translucent. Then add everything else (except the zucchini). Salt & pepper to taste.

Simmer for at least 30 minutes- add the zucchini shortly before serving to prevent it from becoming too mushy.

Cook tortellini separately. Put cooked pasta in bottom of bowl and add the soup. Top with fresh Parmesan cheese.
