1 lb broccoli stems (or 1 lg bunch, washed w/ 2" trimmed stems)
1 lb lean chicken sausage, removed from casing
1 tsp olive oil
5-6 cloves garlic, chopped
10 oz orecchiette, cooked al dente
1 c. low sodium fat free chicken broth
¼ c. grated Parmesan cheese
crushed red pepper flakes (optional)

Directions:
1. Cut broccoli into quarters. Bring a large pot to boil, blanch for about 1½-2 minutes. Drain and set aside in colander. (If using frozen broccoli, microwave for 4 minutes). Re-fill pot with water and salt for the pasta and bring back to boil. Add pasta and cook accordingly for al dente.

2. Brown sausage on medium, small chunks, drain and set aside in bowl.

3. Increase heat to med-high, add olive oil, when hot saute garlic until golden.

4. Return broccoli to pan, mix well with garlic and oil, season with salt and pepper and cook for 1 minute.

5. Add sausage and mix well.

6. Drain pasta and add to broccoli mixture. Reduce heat and stir for 30 seconds. Add broth, Parmesan and red flakes. Add salt and pepper if desired. Toss for 30 seconds. Remove from heat and serve with fresh grated Parmesan on top.

Fresh grated Parmesan is the best! And I use more than the recipe calls for...but my family loves cheese :)

I usually use 2 pounds of broccoli and 1-and-a-half the rest of the recipe for my family.
