Zucchini Muffins Recipe

BOWL 1:
2 c grated zucchini
½ c no sugar appleasauce
¾ c canola or vegetable oil
1 c. sugar (I've used less and it's still yummy)
2 eggs

BOWL 2:
2 c flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp cloves
1 tsp allspice
½ tsp nutmeg

handful or 2 of old-fashion oatmeal

Directions:
Directions:
1. Preheat oven to 350º

2. Beat together everything in BOWL 1.

3. Mix together everything in BOWL 2 except the oatmeal.

4. Beat the dry ingredients in with the wet until all mixed.

5. Grease your pan or muffin tin if not using wrappers.

6. Throw in a handful or 2 of old-fashion oats to the mix and stir. Then fill the tins.

Cook 16 minutes for muffins
Cook 1 hour and 15 minutes for bread - If making bread use 3 eggs instead of 2.

Use the good 'ol toothpick trick in the middle of the muffin to make sure they are done :)

In an effort to try to 'healthify' this recipe I used all applesauce instead of applesauce and oil. I don't recommend doing that ;)
