Ingredients:
Ingredients:
1 lb tilapia fillets, cut in ½ lengthwise
kosher salt & pepper to taste
2 limes, juiced
4 cloves garlic, minced
2 T unsalted butter
8 small soft taco shells
1 c. shredded red cabbage
2 avocados, diced
2 Roma tomatoes, diced
2 T fresh chopped cilantro leaves

Sauce:
½ c. plain greek yogurt (I use (1) 5.3 oz cup)
3 T sour cream light
2 T mayo
½ tsp cumin
½ tsp dried dill weed
½ tsp cayenne pepper (I use a ¼ otherwise it's too spicy for the kids)
salt to taste
squeeze of lemon

Directions:
Directions:
1. Make sauce and set aside (this can be made the day before)

2. Season tilapia with pepper; in a gallon baggie marinate with lime juice and garlic for at least 1 hour.

3. Melt butter in large skillet over medium-high heat. Add tilapia and cook, flipping once, until golden brown. This will only take about 2-3 minutes on each side.

4. Serve. Spoon tilapia into center of each taco shell. Top with cabbage, avocado, tomatoes and cilantro. Drizzle with sauce.

Personal Notes:
I use the frozen tilapia fillets from Costco - they are individually wrapped so you only pull out what you need.

I usually make the sauce and marinate the fish the day before to make...the longer the sauce sits the more flavorful!
