1 package active dry yeast
¼ cup warm water
¾ cup scalded milk
¼ cup sugar
1 tsp salt
¼ cup shortening
1 egg
3 cups sifted flour, divided

Directions:
Directions:
Soften yeast in warm water. Combine scalded milk, shortening, sugar and salt; cool to lukewarm. Add 1 cup flour; beat well. Beat in yeast mixture and egg. Add remaining flour; mix well. Place in greased bowl; turning to grease surfaces. Cover and store in refrigerator at least 2 hours. Dough will be gooey. 1½ hours before serving, shape dough on well floured surface. Roll with rolling pin until about ¼ to ½-inch thick. Cut with a glass rim, brush with melted butter and fold in center. Press front together with finger. Let rise in warm place until double, about 1½ hours. Bake at 400º for 12 to 15 minutes. Makes about 16 medium rolls.
