3 cups sugar
1 cup Dark Karo Syrup
½ cup water
1 cups Peanuts

Part II Ingredients:
3 tsp baking soda
½ tsp salt

* You must have a Candy Thermometer to make this recipe *

Part I:
Cook Part I ingredients in a large pot on a very high heat, stirring constantly to a "hard crack." (about
300 degrees with a candy thermometer). You must use very high heat or it will take forever. It should
take about 15 minutes. You must stir constantly or it will burn !!

Part II:
Immediately take it off the heat and add Part II ingredients Stir hard and well !

Pour mix out onto a buttered cookie sheet(s) and let it cool.
* It will take 1 cookie sheet and 1 pizza pan for this recipe of peanut brittle.
** This batter is VERY VERY hot so be careful with splatters.

Let it dry and cool. Use pads or towels under the pans because them mix is very hot on the counter.

After it has cooled, break into smaller pieces and store in zip-lock bags.
* It will get sticky if its not in the zip lock bags.

*** Clean up is much easier if you have a big pot of boiling water to pour into the pan and on the baking
sheets when finished.

This is excellent peanut brittle and easy to make - but the candy thermometer is very important.
Janel and Horace used to make this for our Jacksonville NC, neighborhood every Christmas.
