Cookie Dough:
1 cup brown sugar
1 cup butter
1 small tsp baking soda in ¼ cup hot water
2 cups rolled oats
2 cups flour
½ tsp salt
1 tsp vanilla

Filling:
1 pkg. dates chopped
1 cup sugar
1 cup water

Directions:
Directions:
Preheat oven to 350º


Mix cookie dough ingredients and place spoonfuls on cookie sheet and press flat with a fork.
Bake about 8 minutes.
Cool the cookies completely.

Boil the dates, sugar and water until thick. Cool.
(Kathryn did not have a Cuisinart, but using one to puree the mixture makes it much easier to spread.)
Spread filling on a cookie and make a "sandwich" with another cookie.
