Ingredients: Steak and Marinade 1 lb beef sirloin steak, trimmed 1T vegetable oil 1 tsp cornstarch 1 tsp salt 1 tsp soy sauce ¼ tsp white pepper
Veggies 2 med peppers(red, yellow, green) 1 med onion
Sauce/Gravy 1 c chicken broth 2 T cornstarch 2 T soy sauce 1 tsp sugar 3 tsp ginger root, finely grated 1 tsp garlic, minced
5 T vegetable oil, divided cooked white rice

Directions:Cut meat into thin strips. In a bowl toss together the first 6 ingredients (Steak and Marinade). Refrigerate 30 minutes. In a small bowl, mix the chicken broth and 2 T cornstarch, 2 T soy sauce, and 1 t sugar. Set aside.
Core and slice peppers into strips. Cut onion into ¼ inch slices.
In large skillet or wok, place 2 T vegetable oil, heat. Sauté peppers for 2-3 minutes on medium high heat. Remove peppers from skillet. Wipe pan dry of remaining oil.
Return skillet to heat, add 3 T vegetable oil, het. Stir fry the onions, garlic, and ginger root until onions lightly browned. Add the beef mixture. Stir fry until meat is browned. About 5 minutes.
Stir the chicken broth mixture, add to skillet. On medium high heat cook and stir until thickened. Reduce heat to medium. Return peppers to skillet. Continue cooking until peppers are heated through.
Serve over white rice.
