1 cup lentils
1 teaspoon butter or olive oil
1 onion
4 garlic cloves
1 small carrot
1 small zucchini
1 small potato
1 large tomato
1 stalk spring onions
a few sprigs of coriander
1/2 cup finely cut celery
4 to 6 cups water
salt and pepper to taste

Directions:
Directions:
1. Soak lentils for an hour in warm water
2.Cut all vegetables into small pieces and keep aside ( use food processor)
3. Now stir fry the finely cut onion and garlic in butter in a large pot
4. Add soaked lentils with four cups water and cook until soft adding all the finely cut vegetables
5. Add more water if needed to have more broth
6. Serve hot with a piece of fresh lemon and garnish with freshly cut coriander.
