1 cup lentils
1 teaspoon butter or olive oil
1 small carrot
1 small zucchini
1 small potato
1 onion
2 sprig spring or green onions
a few sprigs of coriander
cup pomegranate concentrate
3 cups water
1 tablespoon chilli flakes
4 cherry tomatoes
salt and pepper to taste

Directions:
Directions:
1. Cut all vegetables into small pieces and keep aside.
2. Now stir fry the finely cut onion in butter and add washed lentils and coriander leaves with three cups water and cook until soft.
3. Microwave all finely cut carrot, zucchini and potato for 3 minutes in half cup water.
4. Strain water and keep aside.
5. Now mix cooked lentils to the vegetables and stir in pomegranate extract, salt and pepper.
6. Bring it to a boil and serve hot garnished with cherry tomatoes, chilli flakes and finely chopped spring onion.
