½ lb.Spinach (8 Oz. Bag)
1 Onion
2 Tbsp. Garlic
1 (15 Oz.) Cannellini Beans
¼ - ½ Cup+ Parmesan Cheese
Salt and Pepper to taste
Pinch of Red Pepper Flakes to taste
Olive Oil
Hoagie Buns, Halved the long way
*Garlic Bread and Spread

*You can add any other greens to this dish too such as Kale and/or Collard Greens.

1. Dice onion. Sauté in olive oil. Then add garlic for 1 minute. Add beans and spinach and/or other Greens. Season with salt, pepper, and red pepper flakes. Put lid on skillet and let spinach reduce. Add Parmesan Cheese. Mixture is done when spinach is completely wilted down.
2. Put halved loafs on cookie sheet. Put garlic spread on and bake in oven at 350º for a few minutes until slightly crispy.
3. Top each bread boat with a large spoonful of green mixture. Sprinkle with Parmesan Cheese again and spray butter on top, put in oven for a few more minutes until desired crispness. Serve.
