1 ½ cups flour
½ cup parmesan cheese
15 oz. ricotta
½ tsp. salt
pepper to taste
¼ tsp. nutmeg

Sauce Ingredients:
⅓ cup butter
2 tsp. garlic
1 cup milk
½ tbsp. flour
Italian seasoning to taste.

GNOCCHI'S DIRECTIONS:
1. Stir together ricotta, egg, parmesan cheese, nutmeg, salt and pepper, add flour half cup at a time to form a soft sticky dough.
2. Shape dough on a well floured surface with lightly floured hands. Divide dough into 6 pieces. Roll each piece into a rope about 1 inch thick, cut crosswise into 1 inch pieces. If you want you can press fork lines gently on the gnocchi to mark one side.
3. Cook gnocchi in vigorously boiling salt water. As the gnocchi's boil they will begin to rise to the surface. Once all of them are floating on top let them boil for about 30 seconds to a minute. Drain in colander.
4. Top gnocchi's with your favorite pasta sauce or Garlic Cream Sauce.

SAUCE DIRECTIONS:
1. In a small saucepan, melt butter over medium heat. Add garlic and cook for about 30 seconds to 1 minute.
2. Add 1 tbsp. flour and stir for 2 minutes to cook off the raw flour taste.
3. Add milk and spices stirring constantly so no lumps form. Continue cooking for a few minutes until thick. If not thick enough you can add more flour little by little.
4. Serve over your favorite pasta. (Gnocchi's)
