12 eggs
5 cups milk
1 tsp salt
2 tsp ground pepper
1 tsp cumin
1 tsp garlic salt
1 tsp paprika
2 tsp dry ground mustard
2 tsp Tabasco
2 Tbsp butter
1 pound sausage (spicy or favorite kind)
1 loaf of day old sourdough bread or ciabatta
4 ounce can of green chilies (optional)
2+ cups of shredded cheese (pepper jack or mexican mixture)
Optional toppings: sour cream, salsa, avocados, cilantro

Directions:

Brown and crumble sausage in pan, drain and set aside.

Combine eggs, milk and next spice ingredients plus Tabasco together in a bowl.

Tear bread into 1-inch cubes and place in buttered 9x13 casserole dish. Spread crumbled sausage on top of bread followed by egg mixture. Press down bread pieces that have risen to the top. Add in green chilies followed by cheese mixture to cover top of dish. Cover with foil and refrigerate over night. The bread will continue to soak up the egg mixture.

Preheat oven to 350º, remove casserole from refrigerator and let sit at room temperature for about 30 minutes. Place uncovered dish in oven for approximately 50 minutes. If it gets too browned, tent with foil and let it continue to cook until a toothpick inserted come out clean.

Garnish with sour cream, salsa, avocados, or cilantro and enjoy it while it's hot.
