Sausage and Kale Pasta Recipe

2 Tbsp olive oil
2 shallots, finely chopped
3 cloves garlic, finely chopped
1˝ pounds ground italian sausage
˝ cup white wine
1 bunch kale, coarsely chopped, tough stems removed
6 ounces creme fraiche
1-2 cups freshly grated parmesan cheese
1 pound penne or campanelle pasta

Directions:
Directions:
In large pan, sauté garlic and shallots in olive oil for 3-5 minutes, until just soft. Add sausage, break up with spoon and sauté until lightly browned. Add white wine and scrape up any brown bits. Add kale and cover, keeping stove at medium heat. When kale has softened, turn off heat.

Meanwhile, in large pot cook pasta according to package directions. Drain pasta, reserving ˝ cup of pasta water. Return pasta to large pot, add sausage mixture, creme fraiche, and parmesan cheese along with pasta water, as needed to make creamy.

Serve in pasta bowls topped with additional parmesan cheese.
