4 chicken breasts
3 Tbsp butter
1 Tbsp olive oil
˝ cup chopped onion
˝ cup dry white wine
2 Tbsp dijon mustard
1˝ cups heavy whipping cream
dash of rosemary chopped
dash of thyme
dash of tarragon
dash of salt and pepper

Directions:
Directions:
Sauté chicken breast in 2 tablespoons of butter and 1 tablespoon of olive oil until cooked. Remove from pan and keep warm on a plate, tented with foil.

Melt remaining butter in skillet. Add onion and cook until tender. Add white wine and mustard and simmer until mixture is reduced by half. Add heavy whipping cream and simmer until sauce is somewhat thick.

Add rosemary, thyme, tarragon and season to taste with salt and pepper. Return chicken breasts to pan to coat.

Serve with rice and vegetable. (Can separate chicken and dijon sauce.)
