Ingredients: Great for a potluck or family breakfast! Play with proportions to your preferences. The original recipe called for 4x the cheese and ½ the spinach so these measurements were my preference. It also called for mushrooms, which I skipped. So make it your own!
Ingredients 10-12 Large Eggs (1) 16oz package of cottage cheese (small curd). 4oz shredded cheese (I like the white cheeses since they blend better with cottage cheese). 1 stick of melted butter (real butter) (2) 10oz frozen packages of chopped spinach—thaw and place each package individually in a colander and press with paper towels to remove as much water as you can.

Directions:Preheat 350º Non-stick spray a casserole dish.
Beat eggs then add cottage cheese and shredded cheese in large bowl. Next, use a fork to add spinach in small portions until evenly blended. Decide if you wish to add more eggs for the consistency you like. Pour mixture in the dish and bake for 35 minutes.
Let sit for 20 minutes.
