5 oz chow mein noodles, crushed
⅓ c. blanched almonds, chopped
⅓ c. butter
2 T soy sauce
2 t ginger root, chopped
¼ t black pepper
6 chicken breasts, boneless, skinless

Directions:
Directions:
Preheat oven 400º.

Combine crushed chow mein noodles and almonds in shallow dish.

Melt butter. Add soy sauce, ginger and black pepper. Stir to combine.

Dip chicken breast in butter mixture, then roll in the noodles. Gently press noodles into chicken. Place in 9x13 baking dish.

Bake 25-30 minutes or until juices run clear when chicken is pierced with a fork.
Serve immediately.
