1 Tbsp flour
½ cup sugar
1 large egg
2 Tbsp apple cider vinegar
8oz can crushed pineapple – or pineapple tidbits
4 cups granny smith apples (2.5lbs)
1 cup salted peanuts
8 oz cool whip

Directions:
Directions:
Cut apples into small chunks – no need to peel

In a small bowl, drain pineapple juice

Add pineapple chunks to apples, toss in nuts and set aside.

In a small saucepan, mix flour and sugar. Beat egg and add to flour mixture. Add pineapple juice and vinegar. Heat over low heat, stirring constantly, until mixture thickens 3-4 minutes. Allow to cool for at least 10 minutes.

Pour cooled sauce over apples, add cool whip and mix well. Chill. Garnish with additional peanuts
