4 lbs sweet onion (Vadalia if they are in season, red or yellow are ok)
2 32 oz box of chicken broth (start with 1 1/2 box)
1 tsp thyme
2 bay leave (remember to remove before serving)
2 Tbl salt
2 tsp sugar
2 Tbl brandy or sherry
1 chicken bouillon cube
6-8 Tbl vegetable oil

Cut the onion in half, cut ends off, peel skin. Slice like an apple top to bottom not rounds.

Heat pan with oil, put in sliced onions. It will look like a lot but it isn't trust me.

Let it cook down 30-45 minutes, add salt and sugar stir. If it is sticking, add a little oil.

Keep stirring, it will be brown, that gives it the rich brown color in the soup. Keep reducing.

Finally the onions, the bottom and the side of the pan will be brown. Don't worry.

Add thyme, bay leaves, brandy, chicken cube, and chicken broth.

Stir and let it boil once, cover and turn off.

When you are ready to eat, put cheese bread on bottom, pour soup on top.

Add more cheese if you want. Don't forget to take out the bay leave x 2.

Serving:
Swiss or elemental cheese shredded, french bread cut into diagonal slices, toast until cheese melts.
Put cheese toast on bottom of bowl, pour in hot soup. Can add more cheese on top and put under broiler for 5 minutes.

The original recipe is from Julia Child, but I adapted it to make it easier. If you want to make the broth from scratch, you can. But I find little difference in the taste.

Broth - Roast beef bones. In a pot put in water, onions, carrots, celery, garlic and bones. Boil and skim, then reduce heat and simmer for an hour.
