4-6 large green peppers
1 pound ground beef
1 cup finely chopped onion
½ cup uncooked rice
1 egg, slightly beaten
1 teaspoon salt
½ teaspoon pepper
16 oz. tomato or vegetable juice or you may use 1 large can pureed tomatoes
1 small can tomato sauce

Directions:
Directions:
1. Combine meat, rice, onions, salt, pepper, and egg in a large bowl.
2. Mix with clean hands, until well blended.
3. Clean peppers, removing seeds.
4. Fill each pepper ⅔ full with meat mixture.
5. Place in a Dutch oven or a slow cooker*, if desired.
6. Pour the juice and sauce over the peppers. Cover with lid.
7. Start on medium-high temp, cook on top on stove for 1-1½ hours, or until done.

* IF USING SLOW COOKER :
Cook on low: for 8 hours

Cook on high: for 4 hours
