2 3/4 cups shredded green cabbage
1 cup shredded purple cabbage
1/2 cup seeded and diced green bell pepper
1/4 cup peeled and shredded carrots

Dressing:
2 tbsp sugar
1/4 cup cider vinegar
1/2 tbsp vegetable oil
1/2 tsp fresh ground black pepper

Directions:
Directions:
Fill a large bowl with ice water, soak the cabbage for 30 minutes. Drain well.

Toss cabbage with the peppers and carrots.

In a separate small bowl, whisk together the sugar, vinegar and oil. Pour the dressing over the vegetables and mix well.

Refrigerate the slaw for at least 2 hours before serving
