1 egg
1 cup thick sour cream
1 tbsp melted butter
2 tbsp sugar
1 tsp baking powder
1⅓ cups sifted flour
½ tsp salt
½ tsp soda

Directions:
Directions:
Preheat oven to 400º
Grease muffin tin

Beat eggs until light yellow. Blend in sour cream and melted butter. Add sugar and mix well.
Sift the flour with salt, baking soda, and baking powder together and add to egg mixture. Stir to completely blend. Pour into muffin tin, filling cups ⅔ full.

Bake for 20 - 25 minutes
