1 package (10 ounces) frozen chopped spinach,
thawed and drained
2 eggs, beaten
¾ cup seasoned bread crumbs
½ cup grated Parmesan cheese
⅓ cup melted butter
1 finely chopped onion (about ¼ cup)
½ tsp. poultry seasoning
¼ tsp. garlic powder
⅛ tsp pepper

Press any remaining liquid from spinach. Give the spinach a quick extra chopping. Mix spinach and remaining ingredients. Heat oven to 350º F. Shape mixture into 1-inch balls. Place on ungreased cookie sheet. Bake until light brown and firm, about 15 minutes. Serve hot.

Do-ahead tip: before baking, Spinach-Cheese Balls can be covered and refrigerated no longer than 24 hours. Or freeze in a single layer until firm and put them in freezer containers or bags for up to 2 weeks. Baking time will have to be increased a few minutes unless you defrost them prior to baking. These are great to have on hand around the holidays.
