4-5 Medium Russet baking potatoes
4 tbsp buter
1/2 cup all purpose flour- divided
6 Cups milk
2 tsp salt
1/4 tsp pepper
3/4 cup shredded sharp cheddar cheese
1/3 cup finely chopped green onions
1/3 cup light sour cream

Toppings- Cheese, bacon, sour cream, and green onions

Wash potatoes, pierce with a fork and bake for 1 hour at 375 or until tender and baked through. Let cool for 20 minutes. Cut potatoes in half and scoop out the insides. Mash potatoes in a bowl until they are broken into smaller chunks.
In 4 quart pot, melt butter over medium heat. Add 1/4 cup flour and risk to combine. Cook for 2 minutes, whisking constantly, until lightly browned.
In liquid measuring cup risk together milk and 1/4 cup flour. Gradually whisk mixture into pot. Cook until thick and bubbling, about 6-8 minutes. Stir in the potato chunks, salt and pepper. Whisk in the cheese until completely melted. Stir in green onions and sour cream.

Serve with desired toppings.
