1 medium onion - chopped
1 can cream of shrimp soup
8 oz cream cheese

2 envelopes Knox gelatin (unflavored) dissolved in 1 cup boiling water

1 cup chopped celery
1 cup real mayonnaise ( not light or "salad dressing")
1 container fresh crabmeat (8-12 oz)

Directions:
Directions:
Over low heat, melt the cream cheese and the shrimp soup and add the onion to cook slightly
Add the dissolved Knox gelatin and stir well
Add them celery,, mayonnaise, and crabmeat; mix well
Pour into a large copper mold (a fish shape if available) and chill until firm.

To unmold, quickly dip the bottom of the mold into warm water, loosen edges with a knife and flip it onto a plate.

Serve with crackers or French bread rounds.

My mom has made this for Christmas Eve since I was in elementary school.
She uses a slice of pimento stuffed green olive or a black olive slice for the eye of the fish.
