2 lbs peeled and chopped potatoes
3-4 c kale cut into thin strips
1/4 c olive oil
6 c water
salt and pepper to taste
1 chopped onion
3 cloves chopped garlic
1/2 lb sliced chourico

Directions:
Directions:
Place the potatoes, onion and garlic into boiling water. Return to boil. Reduce heat and simmer until tender. Remove the vegetables from the water with a slotted spoon and place in blender. Blend until smooth and return to water. Add kale, olive oil and chourico. Simmer until kale is tender. Add salt and pepper to taste. Skim fat from the top if necessary.
