Sage Cornbread Dressing Recipe

4 slices of bacon (just need the bacon drippings only)
1 cup chopped celery
1 cup chopped onion
2 c. self-­rising corn meal
1 egg
1/1/2 c. of buttermilk
4 tbs. of salted butter
2 “14.5” ounce cans of Chicken Broth
1 pkg. of Bread Crumbs or 1 pkg. of Cornbread flavored Stove Top Stuffing 1 10.3 ounce can of Cream of Mushroom Soup
2-3 tbs. of Sage
2 tsp. of Pepper or to taste
1 tsp. Salt or to taste

Corn Bread Dressing for 4

First, 4 slices of bacon to create bacon drippings; set bacon aside Chop one small onion (enough for a cup)and one celery stalks (enough for 1 cup) and add to bacon drippings. Sautee for approx. 5 minutes then set aside. In a mixing bowl combine three cups of self-­rising corn meal, one egg and 1/1/2 cups of buttermilk; mix thoroughly.

Put mixture into an 8” skillet to cook on stove top or “5 x 9” loaf pan in a pre­heated
350-degree oven for 30 minutes or until done and golden brown. Take the baked or cooked cornbread and place it into a large bowl. Use a large spoon to crumble the cornbread in the bowl.

Next combine in the same bowl 4 tablespoons of salted butter, two 14.5 ounce
cans of heated chicken broth, one package of bread crumbs or package of corn bread flavored Stove Top stuffing, one 10.3 ounce can of Cream of Mushroom soup and the sautéed onions and celery mixing thoroughly.

Take this mixture and spread evenly into a buttered 4” x 4” baking dish. Cover with aluminum foil and place into a 350 degrees preheated oven for approx. 25 minutes.

Next, remove the aluminum foil and allow to
continue baking for an additional 25 minutes. Total baking time is 50 minutes.
