1 cup sugar
½ cup butter -softened

1½ cups flour
1 tsp soda
1 tsp salt

2 large eggs - unbeaten

4 large very ripe bananas -mashed

Directions:
Directions:
Heat oven to 350º
Line regular muffin pan or spray cups with non-stick spray

In large bowl, cream butter and sugar.
In medium bowl combine flour, baking soda, and salt.
Add flour mixture to the butter mixture in three additions and mix well. - it will look crumbly
Add two eggs and mix well
In small bowl mash the bananas until soupy and add to the above mixture
Mix well, stirring up from the bottom of the bowl

Divide among muffin cups
Bake about 15-18 minutes ( we like them soft and a little gooey on top but not mushy or too dry)

Cool on rack

I think this recipe came from my grandmother. My dad always made it and everyone in our family has continued to do so. We may each vary it a bit but nobody adds nuts.

It freezes well.
