Caramel Nut Popcorn Recipe

3 quarts freshly popped popcorn (not from store microwave bags)
3 cups of mixed or favorite nuts - cashews and peanuts work well- adjust amount as desired
1 cup firmly packed dark brown sugar
½ cup light corn syrup
½ cup butter
1 tbsp finely grated orange zest
½ tsp salt
1 tsp vanilla
½ tsp baking soda

Preheat oven to 250º
Line a large cake pan with nonstick foil ( or butter all sides heavily)
Combine popcorn and nuts in the baking pan and mix well.
Put in oven to warm while making the glaze.

In large heavy saucepan, combine brown sugar, corn syrup, butter, orange zest, and salt.
Stirring constantly, bring to a boil over medium heat.
Once boiling, allow to boil for four minutes without stirring.
Remove from heat and mix in vanilla and baking soda. (It will bubble up)
Once glaze is mixed, remove popcorn mix from oven and slowly pour the glaze over the popcorn and nuts to coat thoroughly. (Some pieces may not get covered but most should)
Return pan with glazed popcorn mix to the oven
Bake for about an hour (or until the glaze looks fairly dry). Stir occasionally.
Remove from oven; stir to distribute glaze from bottom of pan.
Let popcorn mix cool in the pan on a rack or stove top grate until completely cooled.
Once cooled it will break apart into clumps
Store in an airtight container.

This can be doubled - just be sure to use a larger baking / roasting pan and a large sauce pan as everything spills out easily if there isn't enough room.
I tend to make enough popcorn to fill the baking pan and then make one batch of glaze for a regular sized pan and a double batch for a roasting sized pan.
