1 lb. lean ground lamb (may use ground beef)
2 medium onions, chopped fine
1 tomato, peeled, seeded, and chopped
1 clove garlic, minced
1/4 cup chopped green pepper
1/4 cup chopped parsley
1 tsp chopped fresh mint
3 tbsp lemon juice
2 tbsp tomato paste
2 packages (10 oz each) refrigerated buttermilk biscuits

Directions:

Preheat oven to 400º. In a large bowl, combine all ingredients and knead together.

Using a rolling pin, flatten biscuits on a hard surface. Place 1/3- 1/2 cup mixture on each biscuit. Arrange on a greased baking sheet.

Bake 10 minutes- until biscuits are brown and mixture is cooked.

May serve warm or cold, with plain yogurt and slices of lemon.
