6 bell peppers
1 lb ground beef
1/2 chopped onion
1/8 tsp garlic salt
1 cup cooked rice
1 can of black beans (rinsed and drained)
1 can of corn (drained)
1 can (15oz) tomato sauce
1 package of taco seasoning
1 cup of shredded cheddar cheese

Directions:
Directions:
Heat oven at 350 degrees. Cut top off from peppers and remove seeds and membranes. Wash inside and outside of peppers. Cook peppers in salted boiling for 5 minutes.
Cook beef and onion in skillet until ground beef is browned and onion is tender. Drain excess fat. Add garlic salt and taco seasoning to meat with 1/4 cup of water. Add tomato sauce, beans, cooked rice and corn to meat in pan. Heat through.
Place peppers in cooking dish. Stuff each pepper with mixture, or cut peppers in half and lay on bottom of 9x13" baking dish and layer mixture on top of peppers.
Cover with tin foil and bake for 45 minutes, uncover and top with cheese then cook 15 minutes.
Top with cilantro, sour cream, salsa, etc.
